Chocolate Drop

Fibersol®-2 was incorporated into a chocolate drop to provide even more soluble fiber into the diet. The chocolate drop with Fibersol®-2 resistant maltodextrin was developed to contain 10% Fibersol-2. Typical cookie inclusion levels will range from 10% to 25%. By adding Fibersol®-2 to both the baking mix and the chocolate drops, a 30 gram cookie can provide the needed fiber amount equal to a “good source” of fiber or 2.5 grams per serving. Please refer to CFR Title 21 regulations when determining whether your product qualifies for making any claims.

Cookie

Fibersol®-2 soluble corn fiber has been incorporated into the dough portion of a chewy-style cookie. The soluble corn fiber in the chewy-style cookie was used to enhance the overall nutritional profile of the bakery item through the addition of soluble dietary fiber. Fibersol®-2 soluble corn fiber is easily dry-blended into the dry ingredients of the dough of the cookie and can be used to replace some of the sugar and corn syrup in a typical formulation. Secondly, Fibersol®-2 has the added benefit of fewer calories than 4 kcal/g sweeteners and addition of soluble dietary fiber. Fibersol-2 is very easy to handle, and is easily incorporated into bakery applications. Fibersol®-2 can be added to any bakery product at levels required to make fiber claims (additional qualifications apply, must meet minimum claim requirements for “Good Source” [2.5 grams of fiber per serving], and “Excellent Source” [5 grams of fiber per serving] claims. Pretzels

A “better for you” pretzel was the idea behind hard pretzels made with Fibersol®-2. The soluble corn fiber was incorporated into the pretzel dough to enhance the overall nutritional profile of the pretzels. Fibersol®-2 soluble corn fiber is easily dry-blended into the dry ingredients of the dough of the pretzel, and minimal changes were made to moisture portion of the dough to give a serving of hard pretzels (28 grams), 3 grams of fiber per serving. Fibersol®-2 is a very easy to handle and easily incorporated into snack applications.

Cheese Sauce

Dips, sauces and dressings-yet another way to incorporate soluble fiber with the use of Fibersol®-2 soluble corn fiber into various applications. Fibersol®-2 has been added to a shelf-stable cheese sauce. Fibersol®-2 soluble corn fiber was easily incorporated into the aqueous phase of the sauce with minimal adjustment in the process. Fibersol®-2 is very easy to handle when incorporated into dip, sauce and dressing applications.
